Val di Scalve offers a wealth of local excellence, starting with the cheeses from the Latteria Sociale Montana di Scalve, the small producer Azienda Spada in Schilpario, and the alpine pastures scattered throughout our mountains. You’ll also find cured meats and fresh cuts from local farmers, wild herbs, and fruits from the garden and forest, which come together beautifully in the hands of our chef.
All our pasta is meticulously handmade. We use locally produced ingredients to rediscover tradition, support local production, and celebrate the aromas and flavors that have been unique to Val di Scalve for centuries.

Wine
In Val di Scalve, grapes also grow, even in our own garden. However, as of now, no one has yet thought of vinifying the rare Scalvini grapes. While we await this glorious moment, we take advantage of our proximity to Valle Camonica, Franciacorta, and Val Calepino to stock our cellar with the finest wines.
However, we also offer indigenous Italian wines, the result of the passionate work of winemakers who are deeply in love with their land, allowing you to savor, in every single glass, the strength and love behind these unique products.
